Dry-toast the peanuts over low heat until the skins loosen and they smell nutty. Keep stirring β the slightest scorch turns the whole sauce bitter.

Briefly fry the chilies and garlic.

Pound the peanuts with chili, garlic, palm sugar, and salt until smooth and oily.

Loosen with tamarind water and warm water until the consistency is right. Squeeze in the lime.
