Boil 1.2 litres of water with the sliced shallots, garlic, and corn. Cook until the corn is tender.

Season with salt and sugar. Taste the broth now — once the spinach goes in there is no time to adjust.

Add the spinach and tomato. Cook for 60 seconds only, then turn off the heat. Overcooked spinach turns dark and bitter.
