Fry the anchovies until dry and crisp, remove and set aside. Keep the oil — that is where the savouriness lives.

Pound or finely chop the shallots, garlic, and chilies. Fry in the anchovy oil until fragrant and lightly browned.

Push the aromatics aside, crack the eggs into the empty half. Let them set slightly before scrambling roughly.

Add the rice. Turn the heat high and toss quickly, pressing to separate the grains.

Season with sweet soy sauce and salt. Toss, taste, then fold in the fried anchovies and spring onion at the end.
